Summary

This trial will have healthy adults drink different types of carrot juice to see how well their bodies absorb the nutrients and if these nutrients help with diabetes and antioxidants. Anthocyanins, phenolic acids, and carotenoids in purple carrots have shown potential in improving glucose tolerance, insulin resistance, and cardiovascular health.

Group I: Starting with Purple Carrot JuiceActive Control3 Interventions
Participants are randomized to consume purple carrot juice first (250 mL) in under 2 minutes. They will crossover to red carrot juice and to purple-red carrot juice.
Group II: Starting with Purple-Red Carrot JuiceActive Control3 Interventions
Participants are randomized to consume purple-red carrot juice first (250 mL) in under 2 minutes. They will crossover to red carrot juice and to purple carrot juice.
Group III: Starting with Red Carrot JuiceActive Control3 Interventions
Participants are randomized to consume red carrot juice first (250 mL) in under 2 minutes. They will crossover to purple-red carrot juice and to purple carrot juice.
