Summary

This trial will look at the effects of eating Tangerine tomatoes on inflammation.

Who is the study for?
This trial is for adults aged 18-70 with a BMI between 18.5 and 30, normal cholesterol (≤200 mg/dL), and triglycerides (≤200mg/dL). Participants should not be anemic, pregnant, or planning pregnancy during the study. They must not have metabolic diseases like diabetes, malabsorption disorders, liver/kidney issues, autoimmune disorders, allergies to tomatoes, recent blood donations or take certain anti-inflammatory meds.
What is being tested?
The study aims to compare how well the body absorbs carotenoids and flavonoids from red versus Tangerine-type tomatoes. It will also investigate if these different tomato types affect inflammation markers in the body. Participants will consume red tomato juice and Tangerine tomato juice at different times.
What are the potential side effects?
Since this trial involves consuming tomato products which are generally considered safe for most people when eaten as part of a regular diet; no significant side effects are expected beyond potential mild allergic reactions in those sensitive to tomatoes.
